Chocolate Chip Crunch Cookies


Preheat oven to 375 degrees F, with the rack in the middle position.

1 C butter (2 sticks melted)
1 C white sugar
1 C brown sugar
2 tsp baking soda
1 tsp salt
2 tsp vanilla
2 beaten eggs
2 1/2 C flour
2 C crushed corn flakes
1 - 2 C chocolate chips

Melt the butter, add the sugars and stir. Add soda, salt, vanilla, and beaten eggs. Mix well. Then add flour and stir it in. Add crushed corn flakes and chocolate chips and mix it all thoroughly.
Form dough into walnut-sized balls with your fingers and place on a greased cookie sheet, 12 to a standard sheet. Press them down with a floured or greased fork in a crisscross pattern much like the kind you put on peanut butter cookies.
Bake at 375 for 10 minutes. cool on cookie sheet for 2 minutes, then remove to a wire rack until they are completely cool.


I do really like these cookies, but the recipe must be adjusted depending oh how your oven cooks, i cooked mine for 9 minutes, and i almost think i should have done just 8. when you melt the butter it makes the cookie chewy, so i want to find out what would happen when you don't melt the butter. but i haven't tried it yet! enjoy!
