i used to hate spinach, at least the kind that comes in a can. but working with food, and being able to taste different foods, foods i wouldn't taste at home like some fish, meat, and tastes, has been able to develop more of my love of food. Spinach has never been something i willingly was going to taste when i was younger. although i did ask for it one time, and i hated it, ben loved it and said it tasted like green beans.
but at work we serve a lot, and i mean A LOT, of spinach. it's in the soup, it's steamed, and they even serve it as the main lettuce salad a good portion of nights. i was first curious of this salad, because it comes with a hot bacon dressing. and one night, i got up my bravery and tried the salad. it's now my favorite salad. today i made it for the family here, and they all actually tried the salad, and didn't make barely any complaints! (dad complained that there were eggs in it!) here are the ingredients for the salad (proportions don't matter, more of what you like, and less what you don't like, but everything together is soooo good)
Salad:
Spinach leaves
White mushrooms
Bacon
Boiled eggs
that's it! you gotta slice the mushrooms, crumble the bacon, and slice and dice the eggs, throw them together and voila! there is the salad. now for the dressing.
Dressing:
Honey mustard (a good deal of it, it'll reduce when you cook it)
Olive oil (or any oil you have on hand, not too much though, just enough to give the bacon flavor somewhere to go)
Bacon
make sure to cook the bacon before it goes into the sauce, it's just easier and faster! put the honey mustard into a pot, whisk in the oil, and start to heat up, crumble the bacon bits into the pot and stir. let it get to a boil, then reduce the heat to low, and let it cook until the honey mustard takes on a dark yellowish brown color. put the dressing on at the last minute before the salad is eaten. Yum!!

spinach leaves are actually way better for you than iceberg lettuce. some spinach and romaine leaves are about the most healthy a salad gets. jeff always gets spinach on his sandwiches and pitas.
i'll have to try this recipe for jeff. he loves spinach and bacon!

Yum spinach!! That sounds way good.
I can testify that this salad is yummy. I was surprised when there wasn't any lettuce, but this salad has really good flavor. And you feel like you are eating healthy even with the eggs and bacon. MMMMMMMMMM.
